BUFFALO, N.Y. — Easter and Dyngus Day rush is a very busy time for Redlinski Meats. The butcher shop is celebrating 75 years in operation, but this year they are down nearly two-thirds of their staff.
“Before the pandemic, we had 24 employees, and right now we have nine,” owner Joseph Redlinski said. “As far as new help, it’s impossible, because I can’t pay people what they’re making at McDonald’s, and I work them harder. So, we had to stop doing certain things.”
Redlinski said that one of the benefits of the pandemic was the introduction of curbside pickup, which has allowed for more preorders. This will help immensely, as they sell 170 times more meat a day the week of Good Friday and Easter, then they do on a typical day.
