LOCKPORT, N.Y. — Colton Balcerzak has been working in kitchens across the region since he was about 13, from Danny Sheehan’s Steak House and Sisters of Charity Hospital to, most recently, Lock 34 Bar & Grill.
Now he’s ready to do his own thing, with plans to open the Quesadilla Co. this October at 6230 Shimer Road in Lockport, where Ted’s Hot Dogs closed in summer 2023.
Balcerzak and his brother signed a three-year lease for the building on Shimer, which was sold by Ted’s Jumbo Red Hots Inc. in July for $490,000 to MDM Real Estate Management LLC. Construction is underway, with plans to change the paint inside and out to a yellow-and-black theme.
