BUFFALO, N.Y. — Eight months ago, Brian Carroll was running a few food trucks to hawk pizzas.

By July 11, he had opened his third Papa’s Pizza Oven storefront in seven months – with more likely to come.

A location opened Thursday at 507 Sunset Drive in Hamburg, where Carroll bought the former Koz’s Pizza Alley, in business for 20-plus years.

That followed an opening in late May at 1537 Union Road in West Seneca, where Mooney’s Bar & Grill closed in October; and the December opening at 155 Lake Ave. in Lancaster, where he took over the former Bozzy’s Pizzeria.
