BUFFALO, N.Y. — With a menu that includes Southern-style shrimp and grits, Texas barbecue and sweet tea, Southern Belle Diner is ready to bring something different to the Western New York food scene.

The new diner is slated to open Oct. 1 at 3575 Walden Ave. in Lancaster, where Vargo’s Pizzeria closed in June. It’s a partnership between Cody Hix – a Texan by birth – and business partner Lourdes “Maggie” Alvarez, who also own a commercial cleaning business together.

Hix, who moved to Buffalo from Texas nine years ago, brings restaurant experience as the son of a diner owner. In addition to earning a culinary degree and a business degree, Hix has cooked in several area kitchens including Fat Bob’s, Papi Grande’s, Cugino’s Italian Restaurant and 2 Forks Up. He’s also done lots of consulting work in the region, helping owners refine their menus.
