Longtime Hudson Valley restaurateur to open Snyder eatery

BUFFALO, N.Y. — A new elevated Italian fast casual restaurant is in development in Snyder by a longtime restaurateur newly returned to the region.

David Chicane expects to open Artusi this fall at 3975 Main St., where Ziggy’s Taco & Subs closed last summer. It’s his next venture, after running Hudson Food Studio for the past 15 years in the Hudson Valley. He sold that business in October.

An Orchard Park native, Chicane started his career 30 years ago with Delaware North in Boston, then ran five of his own restaurants in Peterborough, New Hampshire and the Hudson Valley offering American, Mexican and Southeast Asian cuisine.
