LACKAWANNA, N.Y. — Long known for its housemade pasta and Italian specialties, Mulberry Italian Ristorante is about to undergo a major menu overhaul in late March that will allow chef/owner Joe Jerge to flex his culinary skills while introducing flavors he's learned during his travels.
Diners can expect to see a big Caribbean influence on the new menu as Jerge fuses new ingredients and cooking styles into his offerings. One example: Cavatelli with a Caribbean Chicken Ragu made with sous vide chicken, pineapple sauce, cilantro, jerk spices and curry.
The new menu will also include other Italian-inspired dishes, such as a risotto or a pasta with a different type of sauce, versus his classic Italian ragu. Another new item: Spiedini alla Romana – a fried mozzarella sandwiched between bread and cooked in an egg batter with a mild anchovy sauce with capers.
