BUFFALO, N.Y. — A fast-growing cookie shop is targeting Elmwood Village for its third location.
Half-Baked Cookies expects to open in July after signing a lease to take 1,500 square feet at the Pardee at 451 Elmwood Ave. in Buffalo, where Billionaire Creamery closed its doors last summer. It’s part of the larger Elmwood Crossing campus under development by Ellicott Development and Sinatra & Co.
The bake shop, which also sells Perry’s ice cream, is known for its giant stuffed cookies. Among the items on the menu: the monster, a classic dough cookie mixed with M&M’s and Oreos; plus specials like a raspberry cheesecake cookie made with cheesecake dough, white chocolate chips and raspberry bits; or peanut butter s’mores, featuring graham cracker dough mixed with chocolate chips, peanut butter chips and filled with marshmallows.
Angila “Angie” Snediker started out with a home bakery then opened her first brick-and-mortar location in July 2021 at 5091 Day Road across from the Day Road Park in Lockport. She expanded last summer with a second site at 5407 Sheridan Drive at the Williamsville Place Plaza.
