Farm-to-table experience in Wilson makes a chef's dream come true

They’re also hoping to partner with local wineries as well as other local producers of anything from jam and jelly to honey.

WILSON, N.Y. — It’s taken them 30-plus years, but foodie couple Steve and Kristie Binks say they’ve finally achieved the kind of nirvana chefs only dream about.

In January, the couple began offering curated chef’s table dinners at Binksberry Hollow, the 40-acre farm and event destination in Wilson they’ve created adjacent to their home. With room for up to 10 people at $100 apiece, the 2-3 hour dinners feature a tasting menu with 10-12 courses and a wine tasting option, thanks to a new liquor license.

“I get to experiment on different ideas I’m offering and it gives me a great chance to practice and play with different menus and get direct feedback,” he said.
